Salty Peaches is a modern fruited Gose. With a small lactose addition, it’s not quite in the pasty sour category but it benefits from some of those elements. Kettle soured with a small addition of lactose and with Peach Puree infused toward the end of fermentation – results in a dry, clean and tart Sour Beer.
Vivid orange with mild haze.
Fresh juicy peach with supporting stone fruit notes and some earthy spice from the Lactobacillus. A light sugary note and some hints of vanilla are in the background with some soft mineral notes.
First to the palate is a nice rounded saltiness followed by a prominent refreshing acidity. The Peach comes right through the mid palate and is fresh and tart without being overly sweet. Some sweet malt and a light caramel notes comes through late. There is some fullness to the mouthfeel, but the finish is dry, clean and tart. The last element in the finish is a gentle saltiness that bookends the experience nicely, and reminds you to start the process all over again with the next sip!
